Spinach & Black Bean Burgers
Even though I love my comfort food, my health is VERY IMPORTANT to me. My family and I eat healthier more than we do unhealthy! This recipe is one of my FAVORITE burger recipes. God knows I LOVE me a meatless burger, any day of the week.
Kenya does not eat them because she doesn’t like beans! She is such a carnivorous being (which isn’t a bad thing)! SMH! These burgers can be pre-made and stored in the freezer for future use. If you pre-make them to store for future use, be sure to put wax paper between each burger before freezing!
- 2 Cans of seasoned black beans (14.5 oz cans)
- Spring mix or butter lettuce
- 1 Tomato (sliced)
- 1 avocado (sliced)
- 1/4 cup of white onion
- 1 Large egg
- 1/2 Cup of spinach (chopped)
- 1/2 Tsp. Chili powder
- 1/2 Tsp. Garlic powder
- Olive Oil (for frying)
- 1 Cup Seasoned breadcrumbs (I prefer the garlic and herb ones, I LOVE garlic)
- Rolls or buns of your choice (we use multigrain buns)
- Butter (for grilling the buns)
- Swiss cheese
Drain, but do not rinse the black beans. Place them in a bowl and use a potato masher or fork to mash them. Mash up most of the beans but keep some of the beans whole.
Next add the breadcrumbs, spinach, onion, egg, chili powder, salt (pinch), pepper, and garlic powder. Stir until everything is combined. Refrigerate for 5-10 minutes (this helps to form the patties without them sticking to your hands too much).
Heat a cast iron skillet, that has been drizzled with olive oil over medium-low heat. Form the bean mixture into patties (these are not like meat burgers, they will not shrink when you cook them). Place the patties in the skillet and cook for 5 minutes on the first side. Flip on the other side and place 2 slices of cheese on the cooked side and cook the other side for 5 minutes.
Grill the buns on a griddle until golden. Spread the buns with the condiments of your choice (we used mayo). Place your patties on the buns. Top with lettuce, tomato, and avocado, pop on the lids!
